Sponsored: Airmail Cocktail Variation

Similar to the French 75 Cocktail, the traditional Airmail Cocktail is rum based and uses honey as a sweetener and lime juice instead of lemon. Arguably, the Airmail could also be thought of as a sparkling Daiquiri. In this variation, Charlotte layers on the flavors of both fresh muddled pineapple and The Bitter Truth Aromatic Bitters which work very nicely with the Flor de Caña Seven Year Rum.


5 or 6 chunks of fresh pineapple

1/2 part fresh lime juice

1/2 part 2:1 honey syrup

Flor de Caña Seven Year Rum

2 dashes of The Bitter Truth Aromatic Bitters

Champagne or sparkling wine


Muddle the pineapple in a mixing glass.

Add all remaining ingredients except Champagne.

Shake with ice.

Double strain into a Champagne flute.

Gently top off with Champagne.

Garnish with a mint leaf.
