The Cocktail Spirit with Robert Hess
1/4 oz simple syrup
two dashes Peychaud's Bitters
2 oz rye whiskey
Absinthe or Hersaint
Chill small old fashioned glass by filling with ice.
To another glass add first three ingredients.
Stir with ice.
Discard ice from chilled old fashioned glass.
Rinse or spray with Absinthe or Herbsaint.
Strain other ingredients into prepared glass.
Garnish with a lemon peel.
