Eagle’s Dream Cocktail

Like drinking a cloud! This delicious gin cocktail is a frothy and light drink perfect for brunch. Robert also demonstrates a great tip for adding thick froth to cocktails that use egg white and require a dry shake.

1 egg white

1/2 oz fresh lemon juice

1/2 tsp. granulated sugar

1 1/2 oz Gin

1/2 oz The Bitter Truth Violet Liqueur

Dry shake.

Tip: remove the spring from a Hawthorne strainer and add it to your mixing tin before you dry shake. This will help to emulsify the ingredients and create a lot of body.

Remove spring and add ice to the mixing tin.

Shake once again.

Strain into a cocktail coupe.

Wow, another cocktail with creme de violet.  Awesome.  What was your source for this cocktail?  Or, better yet, do you know where this cocktail first saw print?

I’m really glad to see you left out the little cord - part from the egg white; that surely doesn’t belong to a nice cocktail!

I suppose you could substitute creme de violet with parfait amour? I remember you mentioning about this I think it was in the aviation cocktail that creme de violet is hard to get outside the states/UK.
