Wallingford Cocktail

Almost two years ago now, Jamie extolled the virtues of the Golden Ratio. As a formula for creating new cocktails, the Golden Ratio is 1.5 oz spirit : .75 oz aperitif : .25 oz liqueur. This combination almost always results in a delicious cocktail. If not, it can serve as the base for iteration. Get experimenting!


1 1/2 oz Martin Miller’s Gin 3/4 oz Kina L’Avion D’Or 1/4 oz curaçao


Stir with ice. Strain into a cocktail glass. Garnish with a lemon peel.

Okay, so I decided to give Jamie’s Golden Ratio a shot. 1.5 oz Plymouth Gin, .75 oz Cocchi Americano .25 oz Green Chatreuse dash of celery bitters, sprig of thyme for garnish.

Basically, I was trying to break Jamie’s formula. I’ve been slowly adding liqueurs to my bar collection and the one I can’t stand is chartreuse. It’s far too alcohol forward for my taste and I figured I’d be wasting perfectly good gin and Cocchi Americano (which may be my favorite aperitif of all time.

Thing is, it turned out great. The celery bitters are definitely present, but do a decent job of connecting the flavors of the cocchi and the chartreuse and you wind up with a very herby, bright cocktail with just the palest shade of green. I threw in a sprig of thyme since it seemed to fit.

Anyhow, I’m calling it The Exception—in that it should be an exception to Jamie’s rule, but isn’t. Maybe I need to try something weirder? Scotch, red vermouth, creme yvette?
