Tiki Swizzle Cocktail

The swizzle is a classification of a cocktail. “Rum swizzles” have been mentioned in literature since the late 18th century and originated, like many rum drinks, in the caribbean. Instead of shaking or stirring a swizzle, the drink is, well, “swizzled” with a special stick made from the Quararibea turbinata tree. If you don’t have access to the authentic version, a bar spoon will do the trick.

1 1/2 oz rum

1/2 oz port

1 oz pineapple juice

1/2 lime juice

1/2 oz simple syrup

2 dashes Peychaud’s Bitters

2 dashes Angostura Bitters

build in a glass

add crushed ice

stir or swizzle to combine

garnish with a lime wheel and umbrella

I’m guessing that you had had a fairly frustrating day, by the way you whacked that ice.  :)

I happened to attend Stanislav Vadrna’s seminar on swizzling at Tales of the Cocktail this year and it was very enlightening.  I think swizzling is a skill that needs to make a comeback in the 21st century bar.
