The Bywater is a herbal cocktail design, thanks to the Chartreuse, Falernum and such. You’ve got the cloves, the anise, coffee, slight bitterness and a little sweetness. The falernum balances out some of the Averna flavor to keep it mellow. Plus, while you’re watching, you get to watch Ian eat an entire orange.


1 3/4 oz. Aged Rum

3/4 oz. Averna

1/2 oz. Green Chartreuse

1/4 oz. Velvet Falernum/Falernum Syrup

2 Dashes Peychaud’s Bitters

2 Dashes Regans Orange No 5. Bitters

Orange Peel

Cherry garnish
