Cinco de Mango, 3 Amazing Mexican Mango Recipes

Mangos are sweet and go perfect with Mexican meals. Jet Tila whips up three easy recipes for Cinco de Mayo. They are Pico de Mango, Guacamole with Mango and a Mango-Rita. Enjoy.

Ingredients

PICO DE MANGO

½ Lbs Tomato seeded and diced tomatoes

2 oz Onions minced

2 Cups Diced mango

2 Cloves Garlic, minced

1 Tbsp Cilantro chopped

1 Tsp Oregano chopped fresh

1 fl oz Lime juice

1 to 2 Jalapeño(s) seeded and minced

1 fl oz Olive oil

Salt as needed

Pepper as needed



Combine all ingredients. Adjust the seasoning with salt and pepper to taste.

Use immediately or hold under refrigeration.



GUACAMOLE (WITH MANGO)

2 avocados

1/4 Cup Minced onion

1 Tbsp Serrano pepper, finely minced (optional for heat)

1 Tbsp Cilantro, minced

1 Clove Garlic, minced

1/2 Tsp Garlic salt

1 fl oz Lime juice

2 Tbsp Mayonnaise

½ Cup Diced Mango

Salt as needed

Pepper as needed



Mash avocados with a fork until there are no lumps. Stir in onion, pepper, cilantro, garlic, garlic salt, lime juice and mayonnaise.

Add salt, pepper and mango to taste. Cover and refrigerate until serving



MANGO MARGARITA (ON THE ROCKS)

½ -1 cup of diced mangos (pending number of servings)

1/3 cup water

2 ounces blanco tequila

2 ounces lime juice

2 ounces mango juice

1 ounce orange liqueur (e.g. Gran Gala, Cointreau, Triple Sec)

1 lime wedge

1/4 cup Tajin seasoning in a small bowl or on a small plate



Blend a quick puree of diced mangos and water.

Add the tequila, lime juice, mango juice and orange liqueur to a cocktail shaker filled with ice.

Shake for about 10 seconds until mixture is chilled.

Run the lime wedge around the rim of a glass then gently press the glass into the bowl of Tajin seasoning. Coat the rim well with the seasoning.

Fill that glass with ice then pour the margarita carefully into the glass.

Serve with cocktail straws and an additional lime wedge (if desired).
