So this applies to cheeses purchased at supermarkets as well?  In an ideal world, I’d like to buy cheese with really quick turnover at the retailer, but at most markets in the US a semihard cheese will be cut, wrapped tightly in plastic, and then sit in a coffin case or multideck for a week before someone brings it home.  Is it still alive?
